I made these for an appetizer on New Year's Eve and they got such rave reviews I had to share them with you.
Stuffed mushrooms are so versatile, filled with vegetables, spices, cheese, and other meats. For this batch I kept it simple.
Rather than heavy cream cheese or sour cream, I used a mixture of light laughing cow cheese wedges, plus some parmesan to give it a bite!
I also baked some turkey bacon to chop up and stir into the mixture, finished with a sprinkle of rosemary!
Bake at 375F for 15 minutes and enjoy!
