How to Roast A Spaghetti Squash

I finally got around to roasting a spaghetti squash! I love pasta but don't cook it very often as its high in carbohydrates for such a small serving size. This is a great alternative for pasta that can be featured as the main part of the meal.  1 cup of spaghetti squash only has 10 grams of carbohydrates and 42 calories, compared to about 45 grams of carbohydrates in pasta.

To prepare, preheat your oven to 375.  Cut off the ends of your squash and slice in half length wise. Be careful as these things are hard to cut. Make sure your knife is sharp!


 Then you want to remove the guts and seeds using a spoon. Keep the seeds as these can be roasted as well.

Once removed drizzle with olive oil, salt and pepper. Then place face down on a baking sheet.



Bake for 35-45 minutes. Or until you can easily scrape with a fork. Just keeping scraping the insides to get out all the "noodles". 


Serve with pasta sauce and turkey meatballs and enjoy!

  1. My wife avoids gluten, so usually we get pasta made with rice and/or corn, but maybe we'll try this some time too.
